It's nearing that time of year when the temperature is starting to cool off, and I want to crank up my oven and start roasting all the things! In my opinion, roasted vegetables are the way to go when preparing veggies. This healthy recipe for Roasted Broccoli and Cauliflower with Lemon and Garlic is quick and easy with just 6 ingredients you may already have on hand. It also just happens to cater to quite a few special diets. It's Vegan, Whole30 and Keto-friendly making it a dish that everyone around your table can dig in to.

This simple recipe is one that I revisit time and time again, so I figured it was about time I shared it with you guys. I prep meal components once a week and some variation of roasted broccoli and cauliflower is always on my weekly menu. Call me crazy, but I eat roasted broccoli and cauliflower like candy. Both cruciferous vegetables are low in calories but high in fiber and protein, two nutrients that leave you satisfied after a meal. In other words, load your plate up because this dish is an excellent source of all the good stuff.

I think there's something to be said that after creating dozens of recipes and talking about real food day in and day out, I get the most joy out of sharing my least complicated dishes, like this one. I'm a proponent for flavorful food and this easy side dish is truly delicious. It's also rather easy on the eyes, making it a wonderful dish for entertaining.
There's conflicting opinions in the culinary world on what the perfect temperature for roasting veggies is, but in my world it's 425 degrees. Roasting vegetables in a toasty 425 degree oven churns out veggies that are perfectly browned on the outside and tender on the inside (as long as you get the timing right).

For this super simple recipe, you'll only need six ingredients.
- 1 head of broccoili
- ½ head of cauliflower
- 4 garlic cloves
- 1 lemon
- 2 tablespoons extra virgin olive oil
- & salt and pepper
This recipe yields roughly 4 servings, so feel free to double or even triple this recipe if you're feeding a crowd. Just keep in mind that the vegetables should be arranged in an even layer on the baking sheet, so you may need to use more than one baking sheet to avoid overcrowding.
Once you've gathered your ingredients, chop the broccoli and cauliflower into large florets, thinly slice the garlic cloves and slice the lemon into thin half-moons. Next, toss everything together on a parchment paper-lined baking sheet and roast in your pre-heated oven for 35 minutes or until the florets begin to brown and curl. Give everything a good toss before serving, and that's that! Easy, right?

Roasted Broccoli & Cauliflower with Lemon & Garlic
Ingredients
- 1 head of broccoli
- ½ head of cauliflower
- 4 garlic cloves
- 1 lemon
- 2 tablespoons olive oil extra virgin
- salt and pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Cut broccoli and cauliflower into large florets. Peel and thinly slice garlic cloves. Cut lemon in half and then into thin slices.
- On a parchment paper-lined baking sheet toss broccoli, cauliflower, garlic cloves and lemon together with extra virgin olive oil. Coat evenly. Season generously with salt and pepper.
- Roast in preheated oven for 35 minutes or until the floret edges begin to brown and curl.
- Remove from the oven and give everything another good toss before serving. Enjoy!
