Ingredients

  • 1 ½ pounds baby potatoes or small new potatoes
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons dried dill weed
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon pepper
  • ½ teaspoon sea salt
  • 1 teaspoon nutritional yeast optional (use to add a zesty "cheesy" flavor to potatoes)
  • 2 tablespoons melted ghee optional

Instructions

  • Preheat oven to 325°. Line a baking sheet with parchment paper. To prepare the potatoes, scrub, rinse and dry thoroughly. Transfer them to the baking sheet and toss with extra virgin olive oil.
  • Bake potatoes on the middle rack in preheated oven for 1 hour.
  • While the potatoes bake, make the seasoning blend. In a small bowl, stir together dill, parsley, garlic powder, onion powder, pepper and sea salt. To add a zesty "cheesy" flavor to the potatoes, also stir in nutritional yeast. Otherwise, leave it out.
  • After an hour of baking, remove the potatoes from the oven and preheat the broiler. Sprinkle the potatoes with the seasoning blend and gently toss to coat the potatoes evenly with seasonings.
  • Evenly distribute the potatoes on the baking sheet. Use the back of a wooden spoon, the side of a heavy mug or the bottom of a sturdy bowl to smash each potato until they're about ¼ inch thick.
  • Return the smashed potatoes to the oven under the broil and broil until the edges are golden and crisp (10 to 20 minutes).
  • If using, drizzle finished potatoes with melted ghee before serving. These potatoes are best served immediately when they're warm and crispy.

Notes

  • Use the largest baking sheet you have. The potatoes are going to need extra space on the baking sheet once they're smashed.
  • Rub the object you're using to crush the potatoes with a bit of olive oil to keep it from sticking to the potatoes.
  • Not all broilers are created equal. The broiling time may vary quite a bit depending on how hot your broiler gets, so be sure to keep an eye on them.
  • While not Whole30 compliant, butter can be used in place of the ghee.
